Hard to make out but it looks like Paul's showing how he can drink from a glass (with a stem.)  Most armless people used the same technique of supporting the one leg with the other and then bending at the waist to reach the glass.

Demonstrating the use of knife and fork. The the book previously mentioned also noted that "he would also demonstrate how he prepared breakfast for himself, shaved, washed his face, and combed his hair."
